Bikini Recipe
Yields 10 people
Ingredients for the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Cocktail (yields 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Combine all the components into a pan, heat until it reaches a simmer, agitating until the sugar dissolves. After that, take off the stove allowing it to reach room temperature completely. Decant into an clean bottle, close it keeping it chilled, it can be stored for about four weeks.
Preparing the Batch Mix: Mix the specified liquid ingredients into one large bottle, let it rest for an hour, then strain preferably using a fine cloth, to ensure it's completely strained.
To serve: Add 85ml from the batch mix into a stirring glass filled with ice, and agitate lightly for about 60 seconds until cold. Strain into a frosted cocktail glass or similar, garnish with the cranberries and complete it with a light spray of mandarin oil over the drink.
